Rémi and his wife Laurence started purchasing their first hectares of vineyards around Brouilly as early as 2006. Right from the start, Rémi would work the soils according to organic principles and sold his grapes to the local cooperative. At that time, he already resorted to ambient yeasts to start the fermentation process. In 2010,considering his wine was close enough to what he thought was a good wine, he decided to make and bottle his own wines. Thanks to Jean-Claude Lapalu, Jean Foillard and their likes who took him under their wing, Rémi Dufaitre was allowed into the Beaujolais Gang network.--- Rémi vinifies the traditional Beaujolais style using carbonic maceration. Maturation varies according to the cuvees. Before bottling and according to the vintage, Rémi adds no or only minimal doses of SO2 never exceeding 2mg per litre in order to stabilize the wines. Rémi and Laurence ‘s wines are now an integral part of the Beaujolais landscape. This a must-taste domain ! A REALLY nice discovery !
