Alice-who comes from the Jura region- and Olivier de Moor met in 1992. Both of them are qualified oenologists who used to work for other wineries until the end of 1994. Indeed their strong personality drove them to take the plunge starting with the vines planted by Olivier in 1989 and another 1 hectare of rented parcels in Saint-Bris and Chitry. After suffering a number of setbacks the couple managed to improve their wines which gained in precision, structure and respect for terroir. All this despite inhospitable climate at this latitude and with no help from others. The conversion to organic started in 2005 and they got the organic certification label in 2008. At this stage they decided to restructure the winery in order to adopt a gravity flow approach and also bought a pneumatic press. The vines of this 7-hectare estate are severely pruned to restrict yields to 35hl per ha while others ‘ are over 60hl per ha. Grapes are handpicked and put into small crates so that they won’t be crushed thus producing early oxidation. No Sulphur is used except at the time of bottling. Alice et Olivier allow themselves up to 30mg per litre. Barrels of several wines are stored underneath the grand parents’ house.
There the wines undergo long fermentation with no commercial yeasts and no filtration. The cuvees of the domain produce 45,000 bottles a year, which requires a 15-person workforce for harvest and bottling. The healthy Chardonnay vines of Courgis are deeply rooted into the chalky soil that was a seabed in the Jurassic period. Their Chablis wines-originating from various parcels- are located either on a rich plateau or on more mineral hills producing the mineral Rosette cuvee often viewed as a Premier Cru. The Chizy Bourgogne Aligoté comes in 3 cuvées from a 2-hectare vineyard among which a parcel planted in 1902 ! Finally the last two Bourgogne cuvées are produced from a 1.5 ha parcel located in Chitry and Saint Bris le Vineux. In 2009 they developped a wine merchant activity buying organically-certified grapes in Chablis and Chablis Premier Cru. The vineyard get bigger in 2017 with 2 ha of Chablis premier cru, parcel Mon de Milieu and Vau de Vey. Most of the domain’s wines are exported across the world and buying wine at the estate is a bit of a challenge. Their production is so quickly sold out !
