It’s in 2005 that Fanny Sabre took over the family domain. Over time she acquired prestigious parcels of vineyard in the Meursault appellation zone and today the estate consists of 4.5 hectares in Côte-de-Beaune. She was trained by Domain Prieuré Roche Philippe Pacalet for 3 years and then she got the hang of natural winemaking and learnt how to produce terroir-driven and eco-friendly wines. Nowadays such practices as tilling, grassing and green sprays give life to the vineyard where sound and ripe white grapes are manually harvested. In her cellar-inside the town of Beaune-Fanny uses semi-carbonic maceration.
The red juices go straight into the oak barrels right from the fermenting stage. Air is blown into these barrels in order to stir the lees. A single stirring of lees takes place and no racking will impart freshness, straightness and finesse to her numerous cuvées. Bottling is done by hand, which is the final touch to this meticulous work. From the Aligoté to prestigious 1er Cru cuvées without forgetting “generic” wines , Fanny Sabre has made a name for herself making pure wines intended for refined gourmets.
