The Chapuis brothers, Romain and Guillaume set up their estate in 2009. It’s in Pommard that they purchased a small winery to do what they like most i.e. vinifying. In this region it’s particularly hard if not impossible to purchase a vineyard especially in Côte-de-Beaune and Côte-de-Nuits. So just like some other winemakers today they are in search of grape-growers who do a great job in the vineyard all year round. They select their vineyard with utmost care: grape soundness, soil type and age of vines. Everything is closely examined. Once they’ve chosen the grapes, a contract is signed with the grape-growers producing top quality or even organically-certified grapes.
This 30 year-old boy coming from Aloxe Corton favours gentle vinification methods avoiding too long extraction which would affect their wines. Definitely, vinification is their thing, especially Romain who has gathered long experience as a flying winemaker vinifying everywhere in the world before dropping off his luggage at Marcel Lapierre’s nephew and “transmitter” of natural wines Philippe Pacalet. The appellations produced by Chapuis are Chorey-les-Beaune and Aloxe-Corton.
