Jean-Pascal Sarnin and Jean-Marie Berrux really are two sides of the same coin: they are inseparable, they complement each other and have the same view of what the wine in this region should taste like ie natural , as much as possible. They started their wine trade activities in 2007 and have been environmentally-conscious since then. They are particularly focused on the quality of the soil and that of the vines and go to great lengths to find certified organic, biodynamic or conversion to organic grapes. Although they are involved in many things, they remain focused on these 12 cuvees and this personal touch imparts a unique character to their wines.
When harvest time comes they have very strict requirements: after picking, the grapes are put into ventilated crates then pressed gently and above all vinified wih no sulphur which gives delicate and deeply mineral juices. The white wines all tend to be taut and really fresh with even saline notes. The reds are light and pleasant, a virtuoso display of minerality, fuit and ethereal notes. Wines are matured on their lees for up to 12 months, which brings fatness and depth.
