First of all Cédric Bouchard started studying winemaking in Beaune and worked in a wine shop in Paris for a while. After numerous encounters with winemakers and numerous tastings, he got bitten by the wine bug and the idea began to form in his mind that he could make his own wine one day. It's in Champagne, his native land, that he came back in 2000. He first hired a vineyard plot from his father -"les Ursules" 0,9721 ha- planted with Pinot Noir in 1974. He pampered this parcel and had his grapes pressed at a neighbour’s. He vinified the must in his father’s winery and aimed at putting a terroir and a vintage in the bottles without changing the nature of the vintage’s personality.The "Rose de Jeanne" Champagne was an instant hit in the professional world which gave him wings to move forward and go his own way. Cédric Bouchard waves no organic banners whatsoever and yet his work is very close to biodynamic farming methods.
Each vine carries only 5 grapes and as a result yields are extremely low about 26hl/ha for ‘Roses de Jeanne’ and 54hl/ha for ‘Inflorescence’. The wines undergo only light racking and mature on their lees in stainless steel tanks with no human intervention. Only wild yeasts are used, no sugar enrichment and no dosage, not any more. Minimal doses of sulphur at the time of pressing and disgorging. His Champagne wines all have their own distinctive feature but for sure they have unsurpassed minerality and the finesse of the bubbles too is quite unforgettable ! This Champagne is definitely a must-drink for all lovers of great Champagne !
