Valérie Frison grows 6 hectares of vineyard in Ville sur Arce, a small village of Côtes des Bar: 93% of Pinot Noir and the rest is Chardonnay. The vines have been organically-grown since 2003. “ We tend the vines with great care so that they can express the typicity of terroir and the distinctive features of each vintage. Such care makes it possible to pick up grapes at optimal fruit maturity. Here no blending, each cuvee faithfully reflects the vintage. We vinified our first wines in 2007 with a production hardly totalling 4000 bottles and today the figure has reached 15,000”.
The wines are matured on their fine lees. Alcoholic fermentation starts on its own thanks to indigenous yeasts and malolactic follows naturally. Minimal doses of SO2 are used thoughtfully. At the time of disgorging no dosage is added and no sulphur either. Note that Champagne Demarne-Frison became Val’Frison from 2012 vintage. A change of life logically demanded a change of name !
