Sébastien Poly has been working on the U Stiliccionu Vineyard since 2005 when his grandfather passed it down to him. 7,5 ha of vines with small output south of Ajaccio (Serra di Ferro village). Set up in the 60’s this Vineyard was “re structured” by the grandfather (François) with typically autochtone grape varieties such as : sciacarellu, nielluciu, vermentinu and grenache. This Vineyard characteristics lie in the soil composition : granitic sands with schist veins. It brings delicacy and freshness to the wines, a characteristic rarely met or reached in Corsica. We would say here delicacy « at la pinot noir ». It is this delicacy indeed that seduced us right away and might surprise more than one wine taster! The other particularity of Sébastien Poly’s comes from his work. He did not only take over from his grandfather, he also chose to make organic wine.
After that first conversion to meticulous, thorough and difficult work he went on to biodynamic practice and now has DEMETER certification. We see here a respectful, ancestral work practice like ploughing, homeopathic treatments, indigenous yeasts, none or little sulfite process of wines... Within a few years Sébastien Poy succeeded in creating healthy, pur, fine and perfectly balanced wines. His small production of around 15 000 bottles is sold on an « allocation system» (meaning: you can be happy if you get a few “cuvées”). Our passion for natural wine and spending time with Sébastien was the chance for us to get a few bottles in 2016. We are happy and proud to be able to offer them to you on Petitescaves.com !
