The childhood of Alice Bouvot was entirely dedicated to music, and particularly to cello at the Besançon Music Academy. But music does not make wine, it accompanies wine. So Alice Bouvot studied agronomy in Bordeaux and successfully passed a National Oenology Degree. She then travelled around the world for 3 beautiful years visiting vineyards all over to then go back to her native Jura region and naturally settled down in Arbois. In 2005, with Charles Dagand, she set up a 3,6 ha vineyard that she then took over by herself in 2015. AB certified since 2006 then biodynamic DEMETER certified since 2007. Let’s say it and be done with it : “wines are alive and do not get any input nor filtration”.
Alice Bouvot expresses her emotion, sensitivity through her wines that are born out of « interpretation of various terroirs with best retranscription of messages naturally sent by the vines ». According to Alice, organic and biodynamic work is the only way to obtain a living soil providing balanced functioning. All this is done with humble mind : observation and perception.
Nothing is settled, knowledge requires a long process with no certainty. Alice should eventually welcome a horse companion (Comtois) to contribute to the work in the vines. All terroirs are vinified separately for a better understanding and knowledge of each one. The bottle of wine must keep both terroir and vintage typicity. Some of the terroirs of Domaine sur Arbois : « En curon » (70 ares), Lieu dit « les Corvées » (90 ares), « En Poussot » (50 ares), « La Mailloche » (60 ares), « En Arces » (Chardonnay 50 ares et Pinot noir 50 ares).
