Introduced to the vine world by his father, Julien Labet started in 2003 with only 3 ha. Gathered into one entity, the vineyard today covers over 13ha, converted or in the process of conversion to organic farming and spread over 4 villages, and 13 “lieux-dits” on the south point of the Revermont region. The fragmentary approach of wine vintages mainly from old vines, is a good way for Julien to healthily and fully guarantee the expressiveness of the wine in respect of each terroir. All tell the story of a soil, a climate, a wine variety… all tell the story of a small plot of land. The 12 whites ("ouillés") are mostly cultivated as chardonnay and savagnin.
The 6 reds, sincere, digestible and precision wine, bring strength to the poulsard, pinot noir, trousseau and gamay. In the winery, wine fermentation is a spontaneous and natural process happening thanks to indigenous yeasts. Julien is there to guide the process, provide the right tempo and necessary breathe in order to give top quality bottles. Most of the wine goes through an on lees aging process in barrel. No fining, no chaptalization, no acidification. Main actor of the region renewal, the natural wines of his Domaine Labet are the most remarkable wines of these past years.
