Our opinion on this winery

Luc and Patricia Bettoni settled in St Chinian after falling in love with the region’s patchwork of soils: silica, schistous limestone, red sandstone, a mix of clay and limestone, rounded river pebbles etc… In total, they own 18 parcels at an altitude ranging from 170m to 250m and-to their delight-planted to old Carignan vines including century-old ones. Les Emirades estate have the utmost respect for nature: use of a tracked vehicle in order not to damage the soils, hand-harvesting and severe sorting of grapes which go right into small crates. In the cellar you’ll find only basic kind of equipment. 

The wines are vinified in small concrete and fiberglass tanks. Regarding fermentation, needless to say wild yeasts are asked to do the job! SO2 doses are kept to a minimum, never exceeding 50mg per hl. Low yields was the main target in the first years but they also turned towards earlier picking in order to gain freshness and lower alcohol wines.
