In a former life Jean-Baptiste Senat lived in Paris where he studied history and politics. It was not until 1995-when Paris was in the grip of a general strike- that he ignored his relatives’advice and left for the Minervois region with his wife Christelle in order to take over the family vineyard that had been left in a state of neglect. He rolled up his sleeves and launched himself into a new life and a new job. It took a great deal of determination and courage to learn a job that also had its downside: cold nights, loneliness and stiff back. At that time Jean-Baptiste was often overcome by doubt but he will never forget the day when his mates came to give a hand for the first harvest back in 1996. Jean Baptiste Senat strictly follows organic farming principles and goes even further: gentle pruning, weeding done in the traditional way using a de-earthing plough. The soil learns how to defend itself against stress factors and also to get the necessary nutrients. No hierarchy regarding the different terroirs, the parcels or the grapes varieties, they are all on an equal footing and all give the best they can offer. The winegrower’s role is simply to guide and monitor the winemaking process without much interference. --- The grapes are picked at their optimum stage of maturity and put into small crates. Ambient yeasts start the fermentation and most of the time the grapes are not de-stemmed. In this way fine aromas as well as the freshness and the finesse of the tanins are preserved. Jean-Baptiste’s wines mature naturally with only “natural” human intervention. The blending of the domaine’s cuvées- 5 in all-is the highlight of the year. Living soil and sound grapes always produce natural wines that reflects the patch of land where they were grown as well as the winegrower’s personality.
