Our opinion on this winery
This 14-hectare vineyard located north of Béziers displays a mosaic of predominantly clay and limestone terroirs. There you will find typical Languedoc grape varieties producing red wines but also a small parcel planted with Sauvignon Blanc, Grenache Blanc and small size berry Muscat. The domain really stands out because of its very early involvement in organically-minded practices. For them organic has nothing to do with one of these new crazes but rather a full awareness and a revival of the elders’traditions. Jeff is a fascinating and dedicated character who spends all day laboring in the vineyard where frequent ploughing and severe pruning give exceptionally small yields in this area varying from 20 to 40 hl per ha.

The juices are fermented with natural yeasts and sulphur is kept to a bare minimum. Some other routine tasks are performed according to the vintage or the grape variety: maceration time, traditional or carbonic maceration, punching down or pumping over. Everything is done according to the nature of the grapes that have been harvested. Filtration is a gentle process using a gravity flow approach.
