Just like the famous mountain near Montpellier which rises from the scrubland, Mas Foulaquier stands out above all the rest and the wines produced rank among the best of Languedoc-Roussillon if not the best of Pic St Loup. Former enthusiastic architect Pierre Jéquier has been in love with this domain –which grew from 8 to 15 hectares-since 1988. He soon took control of the business and got Demeter biodynamic certification in 2007. Pierre is assisted by his Loire-born partner Blandine Cauchart. He skillfully produces juicy, vibrant and fresh cuvées. --- The vineyard located at an altitude of 200m to the north of the appellation- undeniably accounts for the top quality but there is more to it than that: meticulous work in the vineyard oriented around the moon calendar, the use of silica, horn manure and plant decoctions. The grapes are put into small crates and the average yield is 35 hl per ha. But the winemaking standards are high too with no yeast addition, no filtering and no pumping. Musts are vinified separately and wines matured in small concrete vats and tronconic ones. Last but not least a gentle gravity flow approach to bottling is favoured not to damage the natural wines “created’” by these two artists.
