Xavier and Mathieu Ledogar - Artisan Organic Wine Grower - Domaine Ledogar. Located in Languedoc, south of France, at Ferrals les Corbières, on Boutenac terroir, the vineyard was set up by the Ledogar family. It is currently run by 2 brothers : Mathieu and Xavier Ledogar. The family has been in the wine growing for generations but Xavier and his father André́ bought a winery in 1998 for their first vinification ! The vineyard has brought together 19 hectares run in organic farming since 2006 (ECOVERT Control). A long way since that time. In less than 20 years this vineyard has gone up to count among the greatest “Languedociens” probably the greatest in France according to us ! Not less than 85% of the vineyard is on the Corbières appellation. Since 2004, the vines have been cultivated in a natural way: Treatments made from herbal teas, powdered sulphur, clays and rock powder, superficial application of biodynamic preparations and soil working. Please note this beautiful distinctive feature : Two/third of the vineyard are planted with Carignan and Grenache, all between 60 and 130 years old !!
Grapes are harvested by hand, their selection is done on stump and transport by crates or small dumpers not to alter berries. We have a traditional wine making process with destemmed grapes, or not, depending on vintage. As for the rest, just the usual for us and our vineyards : indigenous yeasts, no adjuvant, only a bit of sulfites at the time of wine bottling (adjustment at 25 mg/l.) There is a free sulfite cuvée simply called "Tout Nature". We know Xavier better than Mathieu who tends to keep to his vineyard while Xavier is often seen around wine fairs with his smile and beautiful magical accent ! A character, just like the wines he produces. Welcome on petitescaves.com
