After some years in electrical maintenance, winemaking studies in Montpellier and a short stay in a cooperative cellar in the Var region, the Nicolas settled in the valley of Loire in Touraine in 1995 at the 3.5 hectare Domaine de Bellivière. They bought some vineyard plots in Jasnières, and today they possess 15 hectares that spreads over 55 vineyard plots in 5 different villages, sometimes 10km away. A great variety of terroirs characterizes the domain that lies on tuffeau soils where the Chenin vines thrive. And the clay-flint soils is particularly well-suited for Pineau d’Aunis vines. Whether it be for viticulture or winemaking, strict measures are taken: the wines were certified as organic in 2008 and the vineyard is partially cultivated according to biodynamic principles. Low yields, the soils are scraped, plowed and the grapes are manually harvested. As for the whites, Chenin grapes uniquely (up to 80 years old for the old vines), the juices are vinified separately in barrels of 1 to 3 wines, then aged on lees, sometimes up to 18 months. --- Depending on the vintage, noble rot attacks the grapes to a greater or lesser extent that’s why Nicolas can offer a large range of white wines from dry to sweet. The reds are made from vines of Pineau d’Aunis with a yield of 25hl/ha (for some aged a 100 years old). They are vinified in tanks with treading to obtain some nice deep colors, then aged in barrels and bottled without filtration to get smoother wines. Also depending on what nature holds in store that is to say according to the vintage, Nicolas tries his hand at making some sweet roses wines or also a “ Vin de Paille” made from Pineau d’Aunis.
