The Paonnerie is not just a vineyard but rather an institution on the Ancenis Hillsides and more, Jacques and Agnès Carroget draw crowds nationally. Following organic principles since 1997, the domaine has over 20 hectares. On that right bank of the Loire river, between Bretagne and Anjou, wines of the Nantes region (melon) are represented such as: Ancenis wines (gamay, pineau) and Anjou wines (chenin, cabernet). Well highlighted by Jacques meticulous work indeed? Close to grape environment since childhood Jacques participated to harvest as soon as the age of 9. Though times of feasts he also remembers times of harshness. Passion remained untouched and in his mind being a winegrower was not only a profession but a state of mind and a vision of life. His philosophy is clearly orientated towards land and soils and as time goes on he becomes an expert and a true lover.
He generally introduces oats in rows of vines so their roots will provide nitrogen to the plant. He also sows clover for exactly the same reasons. Musts will then be richer in nitrogen and of better quality. Same at the vat, no sulphur, no yeast. For his gamays for instance, he harvests whole grapes. Vatting is done in semi carbonic fermentation for 4 to 5 days. Give pulp to the fruit is a priority. What a joy to be able to meet people like Jacques and Agnès ! And to find the Pao divine nectars in our glasses !
