In the 1960’s, the vineyards of Touraine were renewed and when Thierry and his brother Jean-Marie took over the domain in 1994, the vineyard was unharmed and the repurchasing of acres of land surrounded by a forest perpetuated the family tradition of preserving the ecosystem. Student of Marcel Lapierre and other agro-culture believers , they started the making of organic wines without tricks and linked to the identity of their terroir. The 16-hectare Clos du Tue Bœuf – 10 in the Cheverny appellation zone and 6 in Tourraine AOC- became the symbol of the region’s new viticulture. Then Thierry set up a wine-merchant business on his own buying carefully selected grapes from next-door winegrowers who have the same approach towards viticulture. The aim is also to make wines from other grapes than those of Clos Tue Boeuf like Pineau d’Aunis, Côt but also Côt coming from other terroirs such as Vouvray or Pouilly-Fumé’s.
For this workaholic his native region is not enough, he also commercializes organic wines from overseas. This natural wines fanatic is an institution. Although his wines are downgraded into the Vin de France category, the 27 cuvees have gained many followers over the years. In the vineyard: low yields- 35hl per ha on average- and no chemical fertilizers whatsoever. The grapes are carried to the cellar in a refrigerated truck if needed. Wild yeasts, temperature control, no chaptalisation and no racking, for the fermentations which are done in sawn-off-shaped barrels with CO2. Whole bunch grapes for the reds and in barrel on their fine lees for the whites which undergo no racking of the must. Most of these wines are aged in barrels with no filtering. In the end, these are wines which do not leave you unmoved.
