Aurélien Houillon is from Franche-Comté. He meets Pierre Overnoy
during his childhood and will learn the trade of winegrower by his side. He settles as a partner of the Pierre Overnoy House in Pupillin in the Jura. It is the period of the association of the Houillon family in the GAEC Houillon (Manu, Aurélien and Adeline) to exploit the vines of Pierre (Overnoy). The small area and low yields will not allow the association to exist very long.
In 2007-2008, Aurélien moved to Switzerland and converted a domain to biodynamics, extending his experience in natural wines to new varieties.
In 2016, Aurélien and Charlotte settle down at the foot of Mont Ventoux, in Faucon (Vaucluse), more specifically at the place called La Roche Coucourde, a rock formation in safre, which gives its particularity to the terroir and wines of the Domaine. The estate extends in one piece on 9 ha (vineyards, woods and moors). It is conducted in organic farming. Soils are worked mechanically, without the use of pesticides, and are enriched by the fertilizer provided by their two companions, Victory and Beaver (horse and donkey). In the cellar, Aurélien applies the vinification method of Jules Chauvet. It does not use any oenological input (yeast, glue, sulfur) and respects its raw material (no filtration, gravity work), to give the wines all their aromatic expression and their aging potential.
