Aurélien Houillon comes from Franche-Comté. He met Pierre Overnoy during his childhood and learnt how to be winegrower at his side. He became a partner in the Maison Pierre Overnoy in Pupillin in the Jura. It was the period when the family Houillon (Manu, Aurélien et Adeline) were partners in the GAEC Houillon to work the vines of Pierre (Overnoy). The small surface area and the low returns meant that the partnership did not last long. In 2007-2008, Aurélien left for Switzerland and converted a domain to biodynamics, thereby extending his experience in natural wines to new grape varieties.
In 2016, Aurélien and Charlotte settled at the foot of Mont Ventoux, in Faucon (Vaucluse), more specifically in a place called Roche Coucourde, a safre rock formation, which gives its particularity to the terroir and to the wines form the domain. This latter is in one sole block over 9ha (vines, woods and moors). It is run in organic agriculture. The soils are worked mechanically, without the use of pesticides, and are enriched with natural fertilizer supplied by their two companions, Victoire and Castor (a horse and a donkey).
In the chai, Aurélien applies the Jules Chauvet method of winemaking. He uses no oenological input (yeast, fining, sulphur) and respects his raw material (no filtering, working with gravity), in order to leave the wines with their full aromatic expression and cellaring potential. The wines produced on the Domaine Houillon comply with the specifications of the appellation Côtes-du-Rhône and are natural wines in the strictest meaning of the term.
On her side, Charlotte Houillon (born Touati) is a specialist in Ancient manuscripts. Her research leads her to spend a lot of time in China and Ethiopia, where she has learnt traditional methods of producing paper from plants, together with the art of natural pigments. In 2015 she left her university post and became a service provider in animal traction.
The bottles from the Domaine Houillon are hand-labelled using vine-shoot paper made on site. The first vintage is 2017. Added to that, the domain has 2 guest rooms in a beautiful renovated farmhouse … the visit is definitely worth the detour!
