Laura Aillaud’s domain is in the Luberon, the Tour d'Aigues (84), where the vines of the Vallée du Rhône intersect with the vines of Provence.
Laura’s journey began first and foremost in sommellerie/catering, where she discovered a distinct taste for natural wines and decided to investigate further. She pursued a BTS Viticulture-Oenology and made her first wine with Jean-Christophe Comor (Les Terres Promises, in the Var), which inspired her to make a career of it.
She continued learning for a further 3 years, before settling in the Tour d’Aigues in 2017, in the Luberon, from where she originates. She started by leasing 3 hectares before buying 3 hectares of vines, which she decided to replant. The variety of grapes on the domain is, like the region itself, extremely diverse (fifty-year old grenache, syrah, carignan, counoise, Hamburg Muscat, vermentino, white ugni, roussanne).
Organic farming is a matter of course for Laura, especially in the Luberon, where the sun and the wind facilitate these methods. However, she feels that it is just one of the stages in making regional wines that respect nature.
The earth is seldom ploughed but, when it is necessary, Laura has it done using animal traction, in the same way as for ploughing down, so as not to upset the earth.
The vines are naturally sodded to lock in freshness. Always experimenting and looking to produce a wine that is in her image and traditional, Laura tries to make her wines as natural as possible. In the cellar, fermentations are natural, thanks to the native yeasts, and the wines contain very little or no sulphites.
We appreciate the honesty and the generosity that come out of Laura Aillaud’s wines, certainly a domain to keep a close eye on!
