After a few years at the cooperative winery of Estézargues, Edouard Laffitte felt like cultivating his land. A lot of his friends having already tried the experience… Not from farming background, Edouard started from scratch. Luckily, Loïc Roure (from Domaine du Possible) recently established at Lansac in "JAJAKISTAN", in Pyrénées-Orientales, offered to welcome him in the winery he recently bought, a previous cooperative winery … The last not least thing to do was to find vines. He chose vines in altitude with main North exposure to favour freshness, fruit and reduce the alcohol rate in wine. The story tells that the first visitors to the vineyard found it was the “End of the World”. This would be how the domaine was named « Le Bout du Monde » !
Today, Edouard Laffitte works in an organic way on a 6,7 hectares land over three villages: 3 hectares at Lansac on Granitic Sands 2 hectares at Rasiguères on Schists 1,7 hectares at Cassagnes on Gneiss Harvest is handmade and winemaking process is natural with carbonic maceration at low temperature. No filtration. Winemaking process is done by terroir, white cuvée “Brave Margot” and 5 red cuvées to discover here !
