Set within the Maury appellation zone, this 13-hectare estate is surrounded by scrubland and protected by a range of cliffs. The place benefits from the Tramontana and some maritime influences. The schistous soil imparts a marked personality to the wines. Philippe Wies used to be market gardeners but today they pamper their vineyard planted with a range of grape varieties like Grenache, Lledner Pelut, Syrah for the red wines and Maccabeu, Grenache Blanc for white wines. Regarding tilling, tractors and tracked vehicles are used or even horses ! They have great respect for the flora and the fauna so no wonder weedkillers are prohibited. Philippe regards all this natural life as an ally of great help in facing adversity and producing top quality grapes.
After picking, the grapes are put in small crates and immediately refrigerated in thermo-regulated tanks. Regarding vinification, natural yeasts operate, no filtration and no or only tiny doses of sulphur. Sometimes carbonic maceration of wholes bunches is favoured and grapes are destemmed before fermentation. No punching of the cap and pumping over is used sparingly which imparts finesse and freshness to the various cuvées. For the final touches to fermentation the wines are matured in barrels of 5 to 6 wines.
