Stephane Morin used to be a photographer. But now he is a winemaker and what a talented one! Right from the start back in 2005 he met the right kind of persons like Domaine des Foulards Rouges winemaker Jean-François Nicq. Ever since that time producing natural wines has seemed obvious to him. And fortune smiled on him since the vineyard he purchased had previously been owned by one of the old school who would not use any modern chemicals ! So the old vineyard was sound and so was the soil, which spared him the effort of having to start everything from scratch. Domaine Léonine winemaker Stéphane Morin sprays plant decoctions over the vines, plows the soils mechanically and occasionally even uses a draught horse to do the job.
Grenache is the dominant grape variety or should we rather put Grenache in the plural form as white, grey and white vines of Grenache were planted. All these grapes are vinified with precision and subtlety. Too strong extraction is no way. As for maceration, it is mainly the carbonic type which imparts energy and freshness to all the cuvées. And precisely in this part of France getting fresh wines is quite something ! Stéphane has all that he could wish for and so have we. Indeed, we have the rare privilege of working with him.
